IMO an automated PKI is better than a manual wildcard certificate in the long
run.
I am confused by "systems which run on multiple servers". Are you trying to say
that you need certs on machines without a public IP? If at

We have systems which run on multiple servers, while Lets Encrypt relies on
being able to fetch a value from your server over HTTP. Therefore only one
machine will get the request and the certificate.
