I found no GUI option for this, so I edited the project file in Kate. I guess
that's what I was supposed to do. Is there a plan to add a GUI option for this,
before the release?

I just added a new option in Clip Properties to disable autorotate (in git
master).
Without source clips it's hard to know why your edits caused a freeze. However,

When I opened the project after editing (with Kate) Kdenlive complained that
the video clips were missing and I clicked a button that said something like
"Use replacements", and then it all worked fine.
