I have Ubuntu 18.04.3 LTS on a 2011 Imac 27.5.  The hard drive was replaced on 
this machine immediately prior to installing Ubuntu as the original had a 
faulty bearing.  When I first boot the machine and use it, the fans all seem to 
run smoothly, varying speed depending on the processor load.  But if the 
machine sits a while or I lock it (Command-L) then at some random interval 
after the screen goes dark, the HDD and CPU fans seem to run higher than 
necessary and excessively loud.  They no longer slow down to normal speed 
unless I do a complete shut-down and power back on.
I've tried adding MacFanctld and even telling it to bypass various sensor 
readings under watch sensors that seem to give odd/invalid temperatures.  but 
that seems to have no effect on the problem. (TH0O and TH1O both seem to sit 
around 0 to 9C when it's in a 21C room, TL2V, TLAV, ST2P, TS2V and sometimes 
TS2P read -128 or +128C) all the cores are running at 33-36C.
