What version of LilyPond do you use? I hope that you read the documentation
corresponding to exactly that version and not an older version of the
manual.
In version 2.6 and later, for example, the naming convention for the symbols
has changed to scripts.ufermata instead of scripts-ufermata.
You can also say #LEFT, #CENTER and #RIGHT instead of #-1, #0 and #1,
respectively, if you find that easier to remember.

rest that looks like an inverted "Z" does not feature in any font of music
notation programs? I'm used to seeing that symbol a lot, especially in
hymnbooks. I wonder why it is so discarded by music programs.

The standard method to move objects further away from the stave is to
increase the padding, as described in "Common Tweaks" in the manual.
For example
\override TextScript #'padding = #3.0
to move all text scripts upwards. You can also define a macro like
