I don't understand why you start fiddling with the accidental engraver. If I were to reproduce the example you show, I would just type in the pitches (with alterations) and LilyPond will typeset it correctly. See "Warning: key signatures and pitches" in section 2.2.1 of the Learning Manual".

Many of those words are from bagpipe.ly and related non-automatically-included files. I'm not certain they *should* be included in that list. There are some properties that probably should be included, but I'd caution anybody to check that those properties really aren't included in the most lates
