I don't know if this is the optimal technique, but in each .ly file,
I have a layout block the sole purpose of which is to dictate line
breaks:
layout = \notes
{
s4*4*5 \break
s4*4*3 \break
% etc.
}
Then I just roll it into the \score block:
\score
{
{
