How can I create png output of a small snippet that is cropped to the
size of the snippet, a la the lilypond documentation? I want to create
images to put into a Word document. (It already exists, and I don't
see the need to redo it all in LaTeX, especially as I don't really
know LaTeX)

Graham has explained it perfectly in the docs, moments ago. Use
-dbackend=eps and --png this way:
lilypond -dbackend=eps -dno-gs-load-fonts -dinclude-eps-fonts --png myfile.ly
