I'am building a LTSP lab in my school. I would like to know what kind of network
device could I use for the server? Is there a powerfull device to use or this is not
important?

If you still have a choice then my general advise would be:
1) Go for 100Mbit NICs for the server as well as for the terminals
2) Use switches instead of HUBs
3) Make sure the NICs have room for a boot EEPROM
4) Find out at rom-o-matic which brands and models are supported
