Hey,
is there any way to control the volume with using pulseaudio? E.g. I don't have
access to alsamixer anymore while using pulseaudio, neither from the server nor
from the client (while working on the server with ltsp5).

There's a separate application for that. I think it might be pavucontrol or
something like that.
