That was the problem. I have been using the Symbiont Workstation
manager to manage LTSP and it always resets USE_XFS setting to Y when I
make any other changes to the configuration.
I'll send them a message and let them know as soon as I am sure it is a
bug and not my lack of famil

This indicates that you've set USE_XFS = Y in the lts.conf file, but you
haven't configured your LTSP server to actually serve fonts via XFS.
The simple fix is set USE_XFS = N, and it will grab the fonts via NFS
instead. WHich is what most people do.
