I am using the latest development branches of lwip and mbedTLS. In my
lwipopts.h I have added:
#define ALTCP_MBEDTLS_RNG_FN mbedtls_entropy_func
and everything works fine.

Some other notes:
mbedtls_ssl_get_max_frag_len is deprecated on the latest mbedtls branch.
Any hint how to solve it?
