I have an IOS question. Whenever I type a short message, I hit an
area of the screen that causes me to miss the text from Starting Point.
Is there a way to disable that feature so I'm not always deleting text
from my messages?

No there is not a way to disable that. If you get to starting point of the text
move the insertion point to the end of the text.
