Beofre I bought my Mini I called Apple twice and asked if this would be a problem. They assured me it would not. Recently dealing with another related issue they told me they had never received any complaints about minis not working properly without a monitor. I sent htem a half dozen emails

Yes, you can do this in the login items tab in your account settings in Users and Groups and System preferences. Make sure you mount the desired volumes first and then add them as you would if you wanted an application to startup with the system. I have done this and it works like a charm.
