If you VO right arrow from the table listing your prefered networks, you should
end up on a group. I forgot what it is called but, interact with this group and
inside you will see the rmove button

You can also get an app called AudioSwitcher (I think there's a podcast about
it on AppleVis) which will live in the extras menu. This will allow you to swap
between sound devices quite quickly. In my experience the Mac doesn't always
