I use OPTION + Up Arrow to go to the top, and OPTION + Down Arrow to go to the
bottom.
this works whether I have interacted with the list view or not.

You need to make sure that the window is either in List mode (cmd-2) or Column
mode (cmd-3) and you should interact with the table or column browser to have
many commands work well. You can use option-up to get to the first item in the
list and option-down to get quickly to the last item.
Try Option key up or down arrow.
