Hello,
When composing a message, to enter a new line in the Mac OS X messages
application, simply hold down the Option key in combination with the Enter
key.

Can I ask the same question as well? Would love to do multiline messages
so that VoiceOver pauses appropriately.

will actually send the iMessage.
