Use VO \ to expand the collapsed folders.
You can use this key combination to expand/collapse any list in Lion.

In your mailbox list, there should be listings for Gmail and Icloud. VO will
indicate whether they are collapsed or expanded. If they're collapsed, right
arrow to expand them. They should stay in that state till you change them.
