I teach the Mac with VoiceOver here in France and I always teach people to
launch applications from the Dock with Return, specifically to avoid these
problems with iTunes and Photos.

Thanks, its all done. One thing I want to figure tho. On the old
external drive, in addition to the iTunes folder are other folders such
as Applications, System, Users.

Sounds like the external drive used to be an OSX boot drive. You might
want to rummage around in the documents folder of those users to make
sure you have everything from there. Usually apps are a bit easier to
replace if you happen to delete one and later want it back. After that

Option held down during launch will tell the app to prompt for the
iTunes library location. Some people have found that when doing a
VO-space in the dock to launch iTunes they held control+option a bit too
long and accidentally triggered the iTunes library prompt. So that makes
it a bit easier
