Yes, this will work fine. I don't have a screen connected but I use an adapter
in the HDMI port that emulates a screen, otherwise voiceover is very sluggish.
I have my speakers connected to the audio out jack, no problem at all.

If the mini is connected to a screen via HDMI, do you still have the option to
send out the audio via the 3.5mm headphone jack, or does it force the audio to
