I primarily have all my contacts within my iCloud account, so mostly use the
contacts from there. It kind of depends on where you have contacts within your
various accounts. I do sync my contacts with my work eMail account, but don’t
bother syncing with some other accounts that are used

The default Mail account setting is found in Settings, Mail then it’s the last
item on that screen. When sending an eMail and if you’d rather it be sent from
a different account than the default, swipe right until you hear the account
announced. It is between the To and cc fields.
Thinking... in efforts to move away from Windows and more deeply
into Apple devices, am I correct that I should ADD my accounts to my
contacts? I have a feeling I missed something. I need to go eat and then
get back to this.

I poked around some more. I found a 'clear recents' item and tapped
it. But then I had trouble trying to choose an account to send to. It
definitely is being sent from the default account. I need to get a
handle on selecting another account. How can I ensure my other accounts
are available

In Mail settings, where it says something about the default sending address, is
it still happen to be there?

On m iPhone I just tried to share from an app and sent it to one of
my addresses. It shows as undeliverable. The From field shows an old
address no longer in use.
I cannot find where to delete this old address. I looked in Mail
settings but only see my valid addresses/accounts. Thanks.
