It turns out that one of my issues with Prismo was that it wasn't recognizing my scanner due to a bad installation.
I went in and cleaned out the scanners part of Printers and Scanners under System Preferences, reinstalled the scanner and Voila! Prismo is a bit clunky imho but it does work. I need to adjust the parameters for dpi as 600 doesn't really give me enough to get good recognition from the several items I've tried thus far.
