After reflashing my N800 and changing the user and root passwords, I get the
same problem.
Could be the user (or root) password the problem why the Application Manager
does not work?
Is it possible to reset the user password?
Any idea about that?

I always setup a user password, edit the 'gainroot' script, and lock the
root account using 'passwd -l'
The maemo wiki explains how to edit the gainroot script, or you can just
install the becomeroot package. I don't think either of the passwords
should prevent application manager from working.

Changing the hostname does it. I just changed my hostname and that broke it.
It broke a few other things, too (in xterm, sudo gainroot complains
GET_BY_HOSTNAME() failed)
My original hostname was NOKIA-N800-51. Change yours back to that and it
should work again.

I've installed the GPE filemanager and the gnome-vfs-sftp package into
my N800, so that in theory I should be able to enter sftp URIs.
I can enter FTP URIs and they work, but SFTP always gives me an invalid
URI message.
