I have a folder for a nonprofit I volunteer with. This folder has maybe 5000
old messages in it.
I'd like for all new messages from those people to just go to that folder and
skip the Inbox.

Sounds like the best way to go. Just noting/observation - threading,
expansion and other management of that functionality is head and
shoulders above what’s offered elsewhere in other Mac Apps, IMO.
Documentation, not so much, unfortunately. That’s more a learning
curve perhaps documentation
