Nick, We've found that any alterations set through Table=>modify are written into the tab file. This means that when the raster image is opened subsequently it will load with the last alteration set through this option. The other way to alter a raster image is through layer control=>display. These settings are written to the workspace so when the workspace is re-loaded any alterations to raster images should be re-applied. We've found the last option is better as people can alter a raster image for their own requirements, whereas the former option is more like a default setting.
