What is the recommended way of handling such features? I have a bunch of lines
(held in Postgis) that cross the date line, and the WMS tiles drawn by
MapServer get all messed up. What is the easiest way to get them to draw
correctly?

This might depend a little bit on what interface you are using to display the
map. If you are using templates, you have access to the Map Geometry
information, check out :

I think you can access similar information using OpenLayers.
