I have found that a uDig/Mapserver combination is especially picky on data
that has no clear extent. Try explicitely mentioning the extent, by
including
ows_extent xmin ymin xmax ymax
or
wfs_extent xmin ymin xmax ymax
in the METADATA section of each LAYER definition
