We're going to be using an assortment of Elo Touch screens with Mac minis
and Mac Pro's, the latest models are working out great. Earlier models had
some issues with responsiveness and multi-touch but they seem to have over
come that, they are definatly worth checkout out and seeing if they meet
your needs.
