At the moment, the best option is to spit that large category into
subcategories and toggle these.
Mnemosyne 2.0 supports multiple categories per card, but that version is not
released yet.

category itself? Lets say I'd first study 100, and once I'm ready add
another 60 and so on. Toggling is for selecting specific cards which
seem to be more valuable at the moment of selection.

Not sure I understand your question completely, but you can use 'activate
categories', to turn on and off selected categories.
