Is there a way to change these default settings? I'd like weeks to be
defined as Sunday through Saturday.

This week is Monday - Sunday.
My task filter is:
Show Actions = All
Advanced Filter = Start Date = This Week
Hide Undated
Start/End Dates = blank
Show Completed = hide/recent
and I get a view of all the tasks that are starting this week, from Monday
