A lot of other utf-encoded characters work so the settings are not wrong. It seems like mysql looses some information when it stores these characters. At first I thought it was something wrong with the Java JDBC-driver but when I got the exact same problem using the mysql-terminal client I concluded there must be something wrong with the server.
