We are running an NT network with exchange server and Outlook (obviusly).  I
was wondering if there are any clients for Linux that will be able to
retreive/send e-mail using Exchange as well as getting the user list.

A good place to start is to get a book on samba(try an orielly book).  At my
work we actually have the PDC as linux box that everyone logs into.
