I tried once, worked 2-3 days on it without getting close (but that time
it was shortly before release 3).
Updating kde also took quite a while. So it is a lot of effort.
Package sources can be derived from gnome ftp servers easily.

Note that desktop environments other than GNOME have been found easier to
package, so Xfce or KDE should actually work pretty well.
