I've added this feature to sbackup series 0.11, sorry for the delay...
It is completely optional. To use it, please add following options to your
configuration file:
...
[hooks]
pre-backup =
post-backup =
...
You only need to specify scripts that should run, just leave it out if
not required!

I would like to have this feature too.
I have to mount an EncFS-directory before backup and unmount it after
it.
At the moment I'm using a modified anachron-file of sBackup for this.
