I got as far as proving that nprobe was still collecting flows, then rebooted
the machine, which fixed the problem. But why? What would rebooting do that
restarting ntopng and nprobe wouldn't?

I've upgraded from v.3.3.180211 to v.3.3.180219, and now I'm seeing no
traffic recorded. The only interface in the Interfaces dropdown is the combined
one that we used before I enabled dynamic network interfaces. Normally these
become available to select a short while after restarting ntopng.
Can someone please tell me what the Ingress Packets Sampling Rate setting does?
Can't see anything in the user guide. It's set to 3 by default for my
interfaces.

Apologies for the repeat postings. One of our spam filters has suddenly decided
everything from this list is spam. I've whitelisted it now, so hopefully that's
fixed. I suspect this has happened before when the list has gone quiet, so I
should remember to check the archives.
I'll try disabling
Sure. Tell me when new packages are out and i give it a go.
