I do not think the trial version will allow you to do a P2V conversion.

You want any imaging program that can restore to different hardware.
LiveState by Symantect used to do it. Acronis can do it too I think.

If convertor wont do it for you, you could also ghost it from one product to
another and then run the convertor on it. IIRC the convertor works directly
with ghost and livestate.

If by good ol' server you don't mean ESX, then you should be able to just
open the VM in server (I'm pretty sure).
But if you mean ESX, then you're going to need to convert it.
