not only is it possible but easy. if your router has multiple public ip
addresses then do a one to one nat for the second server with one of the
unused addresses. make sure to add the appropriate rules on the sonicwall to
allow smtp and pop.

Sure it's possible. Can you map two Internet Addressable IP's to the
external interface of the the Sonic Wall?
If you can, just create a rule for each IP.
Mail..com 209.x.x.1 --> 10.0.0.1:25
Mail..com 209.x.x.2 --> 10.0.0.2:25
