what about at differing speeds? a quad core tends to be slower mhz wise then a
dual core.
Is ZFS good at multi threaded operation?
Also, if I have the option to, should I enable or disable hyper threading?

The Core Quads have a higher instruction per clock ratio. That means
they're faster at same clock.
