In Memory of Maria Teresa Fighetti As many of you are aware, Carlos Fighetti,
president of the AOS, lost his wife to a tragic heart attack over the weekend.
On behalf of the entire membership, we wish to express our condolences and
sympathies to Carlos and his children
Humphrey dries the beans in airtight sealable plastic bags in the sun
for a
couple of weeks. The beans will turn dark and shrink. He then cuts them
into 1-inch pieces and steeps them in vodka for about two months.
The bags can't be to airtight as where would all the moisture go if he
is drying
Correct, indeed. Traditionally they are wrapped in burlap and laid in the
sun to ferment and dry, as I understand it, and done so over many months.
