I use the OSG within a custom GUI, so I can't speak to using osgViewer, but the rest of the frameworks build fine for me on Snow Leopard. I use 10.5 as the SDK, so I'm not using any SL-specific APIs.

these folded into trunk? Are there any Snow Leopard users who can report doing a 2.8.3 release -- basically 2.8.2 plus support for Snow Leopard?
