Actually, OsmAnd implements different navigation modes and presents them to
the user as "profiles": you can also create your own, if you are not
satisfied with the provided ones, by "mixing" the features you like: just
check menu *Settings -> Manage app profiles -> (+ Add)* button.

I changed the location of the files to the SD card, after I posted my
original post, on this thread. however the main application is still in
device internal memory. In doing so my maps had to re download. I hope I
didn't mess anything up.

By default, OsmAnd uses Internal application memory, user and other
application doesn't have access to that folder for security reason. You can
change default storage in settings.

Great! Thank you, that seems to do the trick ;-)
How does the airplane mode does it? In ideal world I would like to use
this navigation method on request in pedestrian mode (where my map is
already configured to the desired look).
