Looks to me like you are getting echo from somewhere. Every byte is echoed
back. Check the settings for each part of the data path and make sure echo is
disabled.
Another problem may be with the way owfs detects the adapter.

adapter connected, not the DS9097U.

Xport coupled to a serial link.

Never tried but I don't think so. Might also depend on which and how the
RS232->LAN is made.
Something like HA7E would AFAIK work as it's ASCII-based and not that critical
for timing issues. Also untested
