Yes, just put them in different folders with separate databases.
You can access them, for example, at http://servername/instance1
http://servername/instance2, etc.
There really is no difference in installation except for the path
and database name.

It seems there are some issues with fscache. I also had some problems related
to that. Is anyone working on optimizing the cache for OC 5?
I'd at least like to see some options in the interface for clearing the cache
and/or disabling it completely.

I don't
see a way to make a copy at all besides copying to the local machine and
then to the other folder. Is this a limitation of the WebDav protocol,
the implementation of the protocol, or am I doing something idiotic?
