You could use multiple calendars as you suggest and then either write a custom
web part or purchase the List Rollup and Calendar Plus web parts from bamboo
Solutions (not an endorsement!).
This will allow you to rollup calendars across an entire farm and even colour
code the events I believe.
All on the same server. Yeah, different content databases, so that storage
usage can be tracked easily.

I think you will have to enable session state = true if you are using
session variables in your code, not for the general session timeout.
By default SharePoint web.config has SqlServer session state but you can
change it (to the sessionState mode=InProc depending on scenario.)
