You're missing several other flags needed for ParaView to use OSMesa
e.g. VTK_OPENGL_HAS_OSMESA. Also, your CMakeCache.txt shows that
OPENGL_gl_LIBRARY, OPENGL_glu_LIBRARY, OPENGL_IN
