If you export the animation from Paraview, Windows Movie Maker, which is free
to all Windoze users, will allow you to insert titles anywhere in the video.
I'm sure there are similar utilities for Mac and Linux, but I'm not familiar
with them.

Unless I misunderstand your first question, you should be able to make the time
series of the two data sets consistent using the temporal shift scale filter.
There is no direct way to get a data set to not load during a certain time, but

animate, but have the second view of the same dataset animate? Is it possible
