I've used a spotmeter when photographing sunsets, and taken my reading from the spot where I wanted the color density to be approximately that of 18% gray, usually right next to the ball. That retains the color. However, your foreground will be dark. The solution to that is HDR or multiple expos

You can get the sun to be yellow or orange in one shot if you are willing to sacrifice detail in the land. The sun is sooo much brighter than anything else in the frame, and the land will be back lit. So, you either choose to have the sun and the rich colors, or you have the land and blown out sk
