Geez, I ride a fixed gear (no brakes) track bike for a living, and people think
I'm nuts! I know it ~can be done~, but I'd hate to have to stop fast on a
penny-farthing!

the advice I usually gave new riders. If you want to be good, find a
good coach. If you can't find a good coach, find a fixed gear bike.
It will force you to do things right or beat you to death until you do.
