Once set up Lineage is actually very much a normal Android experience and i
have set up devices for non technical users before. but it would be very
much what one of us would do to set up the device for a friend/customer.

F-droid is your best bet. I also would suggest maybe lineageOS to bring it
much more current than stock. If desired you won't even have Google apps or
the Google play store.
