How can I delete all of my personal information
and make this tablet work without it being on my
Google account?
Settings->Backup
F-droid is your best bet. I also would suggest maybe lineageOS to bring it
much more current than stock. If desired you won't even have Google apps or
the Google play store.

I don't have a link nor the time to find one. I google'd it and didn't
find anything. I do find it funny

The Ubuntu mobile UI was a nice platform to work with in a tablet or phone
interface, but the application ecosystem was horrifying to deal with. I am
sorry a slapped together wrapper for someone's website is not an app. It is
a bastardized browser experience that is worse than just using a browser

It's sad to see so much development get scrapped and I really wanted to
see a sucsessful ubuntu phone, but I can't help but to think that this
will ultimately be a good thing.

How about a MS Surface Pro - core i7? You can wipe Windows and install

I need the tablet with the biggest screen (Android or Mac) that can be
visible in direct sunlight as well as dim(able) to the point of being
visible under *VERY* low light without blinding brightness.
This is the test for brightness:

I have been very pleased with my OnePlus under these circumstances. but
your screen requirements are a little open ended.

Here's the tablet with the biggest screeen that I know of:

You'll have to research if the screen will work for you.
I'm my experience there is no screen that would be dim enough to meet

screen brightness issue.
