called QMobile which
A number of streaming applications use caching in various incarnations
including persistent storage. Moreover, some let the user decide which
files to cache...
I'm guessing this is acceptable, if it can be argued that the main
feature of the application remains streaming (and not caching).

I've had some thought about doing an integration with Dropbox. I think
the Dropbox iPhone/iPod app supports to play music which you have
stored in your dropbox, so it would only need something on the SBS side
that made it easy to select which music to include.

Ipeng is wonderfull. Was the compelling reason for me to buy an ipod
touch.
An obvious missing feature is the ability to copy files between
squeezebox server and my ipod so i can take some music away when not
connected (and wo using itunes).
Would this be possible ?

onto the iPhone/iTouch. But there may be a way around it.
